It’s Merry Christmas day! It is also food lover’s day. Actually, winter brings in the cosy homely atmosphere when people prefer to stay at home due to severe cold outside. Most of the places in the world celebrate holiday season- either it is declared holidays or it is the time to spend all your accumulated leaves to enjoy the beautiful time of the year. I am in the second lot, spending time with family, enjoying the warmth of the kitchen. When family members love to have good food, who doesn’t have the heart to feed them? The awesome feeling of satisfaction comes with the awesomely tasty self-prepared food. After all homemade meals are healthy and hygienic for sure. So here I share my recipes with you all. And I must remind you that I am a quick cook- don’t spend much time in the kitchen!!
Today’s breakfast couldn’t have without cakes. The evergreen french toast and oranges made the winter morning perfect. This is a quick breakfast which can be prepared in minutes if you bake the cakes in the weekend and store them for the whole week.This is a good plate of sandwiches and potato cutlets. Prepare sandwich the way you want and then dip them in egg-onion batter, fry in little oil in a non-stick fry pan. Boil potatoes, peel them and mash them. Add spices like turmeric, red chilli, coriander, cumin powder and little garam masala or black pepper powder. Dip them in egg white and shallow fry. Enjoy with tomato ketchup.Lentils: When it is cold outside, you can have lentil soups. I prepared this by mixing five kinds of lentils. Soak the mixed lentils in water and boil them in the pressure cooker with turmeric powder and salt. Then heat oil in a pan, add dry red chilli, chopped onion, a bay leaf, chopped tomatoes and fry them. Then add the lentils from cooker and give it a boil. Add chopped coriander and lemon juice for seasoning. You can add vegetables too for healthier effect. Isn’t this easy and healthy?Egg- Spinach: This is an easy and yummy dish made with egg and spinach. Grind the spinach leaves with green chilli and keep aside. Boil the egg and fry them in a pan and keep aside. Now in the remaining oil add chopped onion, chopped green chillies(optional) and hot spices powder ( Powder of cinnamon, cardamom and cloves). Cook little and then add spinach paste. Add little turmeric powder and salt. Give a boil and add the eggs. Cook for a while and it is done. Healthy and nutritious food in minutes. Have it with hot rice or chapatis/rotis.Green chicken curry: Make a paste of spinach, coriander and mint leaves with garlic and green chillies. Heat oil in pan/ pressure cooker. Add chopped onions, ginger paste and cook well. when the onions turn brown, add chicken pieces. Add allspice powder like cumin, coriander, and turmeric. Add salt to taste and cook the chicken nicely. When it is done add the green paste and hot spice powder. Cook till the chicken is tender. Add half teaspoon sugar(Optional) and lemon juice at the end. Give the dish a standing time of twenty minutes. Then enjoy with hot rice / rotis/naans.Paneer with curd: Soak paneer pieces (if Store bought) in lukewarm water and drain it. In a pan add oil, curry leaves, dry red chillies, cumin and mustard seeds. Add coriander, cumin, chilli and turmeric powder one by one. OR- make a paste of allspice powder by soaking the powders in water, if you are not in hurry. Then add one chopped tomato, add water for gravy. When gravy boils add all the paneer pieces. Cook for few minutes with lid and then add half a cup of curd(well battered), garam masala and ghee. Switch off the stove. Put the lid on. Give at least ten minutes of standing time. I prepared this without onion, ginger and garlic (pure vegetarian). After adding curd don’t boil more than a minute. Add sugar as per your taste. The taste must be sweet-sour and spicy.

For the eggs with spinach, you said you boil eggs and then you pan fry them. Do you coat them in anything? I’m just curious.
The boiled eggs are pan fried with little turmeric powder. You can fry without turmeric too. Thank you so much for showing interest in cooking. I love to cook. Thanks for reading :
